Dinner Fundraiser for Leucan at Cabane du Coureur

Renowned chef Jean-Sébastien Giguère, who heads up four prestigious restaurants—Le Coureur des Bois, H3, Climat and La Cabane du Coureur—will soon be lending his culinary skills in support of Leucan children and their families. He is offering a unique foodie experience in the form of a shared meal featuring local ingredients and celebrating our province’s distinctive regional flavours.

Food-lovers are cordially invited to attend the inaugural edition of this informal event, to be held on September 27 in the cozy and rustic setting of his restaurant, La Cabane du Coureur.

The event promises to be a true feast for the senses, where the generosity of the food served will match that of the epicureans gathered there. Don’t miss this wonderful opportunity to join in solidarity with other Leucan people in supporting our noble cause—while enjoying a delicious meal!

Your Chef


Jean-Sébastien Giguère is a chef, maple syrup producer, beekeeper, restaurateur and entrepreneur who never stops moving at breakneck speed. Always full of ideas, he just can’t stand still!

Jean-Sébastien began his career alongside Danny St-Pierre and Martin Juneau, before joining Normand Laprise’s kitchen at Le Toqué, where he worked for eight years. Today, as well as being a partner at Restaurant H3 and Terrasse Alizé in Montreal, he is also involved with Coureur des Bois in Beloeil, Cabane du Coureur in Saint-Marc-sur-Richelieu and the all-new Climats restaurant recently opened at Time Out Market in Montreal. And since he thrives on new projects, more exciting ventures are coming in 2025!

Jean-Sébastien attributes his success to the outstanding people he’s met in the restaurant industry over the years. For him, the key lies in the people who are all around him and the desire to help his team members grow: “Without them, I’m nothing.” Jean-Sébastien loves a good challenge and has a dream of one day being almost self-sufficient in sourcing ingredients for his kitchen, which features local products. He is also involved in the Aeria urban greenhouse project and the Etamamiou outfitter project in the Côte-Nord region. Plus, he maintains wonderful friendships with fishers, farmers, ranchers and vintners.

After being the chef responsible for impressing guests at the last two editions of the Association’s signature event—the Leucan Experience—I wanted to continue supporting the cause, but in a different way. So I came up with the idea of holding this gourmet event in the form of a shared meal. As the father of two healthy young children, it felt only natural to invite people over to “my place” to solicit their generosity.
